Vanilla ice cream

For 4 people:
2 cups of whole milk, half a litre of cream, 250 grams of sugar,
10 fresh eggs, 4 vanilla beans,
a tablespoon of balsamic vinegar of Modena Tradizioanle well aged.

Combine in a saucepan the milk, the cream
and add the vanilla incised in the length.
Bring to the boil.
Whip the egg yolks with sugar,
beating vigorously with a whisk then,
combine milk and cream mixture slowly.
Mix well, put the fire avoiding boiling,
Cook until the custard not veils the spoon.
Allow to cool and filter finely eliminating the pods,
then pass it in ice cream.
Put the ice cream into bowls and finish with two serving spoons
Traditional balsamic vinegar.

For the wine pairing we recommend
a Sauvignon Blanc or Chardonnay.
