Salmon Carpaccio

Ingredients for 4 people:
300 grams of salmon sliced not too thin,
parsley, chives, Salt, extra virgin olive oil,
two tablespoons of balsamic vinegar aged.

Chop the herbs and
baked salmon steam for about 15 minutes and
flavored with a pinch of salt,
season the slices.
Add a little olive oil and
Sprinkle with balsamic vinegar.

For the wine pairing we recommend
a Friulian white Picolit or Pitignano.
