A sweet-and-sour condiment with an intense brown colour and a delicately persistent aroma, slightly acetic and complete with delicate woody aftertaste. It lends itself well to use on cooked vegetables, omelettes, meat or fish at the end of cooking but also to adding dimension to a plate of typical seasoned cheeses. Definitely worth trying it, because sometimes the palate reveals quite novel pleasures!
